Peppermint Patty Sandwich Cookies

On the 4th day of Christmas... I know its been more than 4 days, but we had a super busy, but fun weekend in Chicago. I'll let you all know about that at another day.
The girls and I had such a great time Sunday evening as we made these yummy holiday treats for our friends who love sugary sweets. This was Gemma's first time helping with baking and was a very good helper cracking eggs and mixing the wet ingredients.
Using the hand mixer was particularly entertaining and messy. We ended up with quite a bit of filling flying around the kitchen at one point. But sometimes that's the fun of it!
They finally discovered that cooperation was going to be the best for all involved.
We made a double batch and were busy filling and rolling in crushed candy canes well after Miss Gemma went to bed. Isabella has always been an awesome baker.
