what are your plans this weekend? here in the midwest we are experiencing a rather snowy weekend. 5 inches last night and it is still snowing. weekend snow days for us include bundling up, grabbing the sleds and snowboards, hopping in the suv with the argentboy and heading to our favorite big hills. afterward, it's hot chocolate, soup and the kids most loved homemade pizza bites.
Pizza Bites
Ingredients
32 oz. can crushed tomatoes
1/2 lb. ground beef
1 T. extra virgin olive oil
1/2 green pepper small dice
1/2 yellow onion small dice
1/2 tsp. garlic powder
1/2 tsp. Italian seasoning
1 pkg. flour tortillas
1/4 lb. pepperoni small dice
16 oz. bag of shredded cheese
Kosher salt
freshly ground pepper
spray oil
Directions
Brown ground beef, drain, set aside. Over med heat add olive oil to skillet and saute peppers and onions. Once the veg are soft add the crushed tomatoes, garlic powder and Italian seasoning. Turn down heat to med low, give a good stir and cover to simmer and marry flavors for 15 minutes. Add salt and pepper Add beef and set your filling aside for now. Preheat oven to 350F.
Use the spray oil to coat a large mini muffin tin. Using a small round biscuit cutter, cut circles out of the tortillas and press into the muffin tin.
Fill each little pocket with a scant T of the ground beef mixture. Have your helpers top with pepperoni.
Sprinkle with more cheese than you think. We like these cheesy!
Place tin in the oven for 15-20 minutes or until cheese has melted and just beginning to brown. Let cool for 5 minutes. Serve and enjoy!
