Pasta, Peas, Proscuitto & Parmesan

Do you think this girlie likes pasta? The answer is yes!  In our home, we all love pasta.  For this mama, pasta is my easy, go to dinner.  It's my "I've worked a long day and just want to get something on the table that is tasty and good for them" dinner.  This recipe, like many of mine was created from what I had in the fridge and/or pantry.  It is easy and it is delicious!

Orecchiette with Peas, Parmesan & Proscuitto

Ingredients

1 pkg orecchiette
3 Tbs. extra virgin olive oil
1 clove garlic sliced
pinch of crushed red pepper
1 lemon zested
1 C frozen petite peas
4 oz.  prosciutto, chopped
1/3 C dry white wine
Juice from 1/2 lemon
1/2 C grated Parmesan cheese and more to serve
kosher salt
freshly ground pepper
1 Tbs. fresh chopped Italian parsley

Directions

Cook orecchiette in large pot of boiling salted water until al dente. Drain, reserving 3/4 cup of the pasta water.
 Drizzle olive oil in heavy large skillet over medium heat and add garlic saute until fragrant.  Don't brown the garlic it gets bitter.  Stir in peas, prosciutto, wine, crushed red pepper and lemon juice. Simmer for a couple of minutes. Add pasta, parsley,cheese and toss to coat, adding enough pasta water to moisten. Season to taste with kosher salt and freshly ground pepper.  Serve right away with extra cheese to be grated at will.  Serves 6.
