Promoting healthy food options for families has always been a passion of mine. I've loved Jamie Oliver and not only for the accent, the cute hair and his down to earth style, but he is a great chef and has paved the way with his Food Revolution campaign to educate families and our children about tasty, healthy and practical foods. This week, in honor of Food Revolution Day, which is this Friday, May 15, I will be featuring healthy, simple foods. My healthy lunch today is, Grilled Chicken Southwest Salad.
It is super easy and tasty! First, thinly slice radishes, place in a small bowl, add red wine vinegar and set aside (you can also pickle red onion or shallots this way!). Next, lightly salt and pepper a boneless skinless chicken breast or 2 thighs and grill. Chop the grilled chicken and place in a bowl. Chop romaine lettuce and add to the grilled chicken. Add fresh salsa, recipe HERE and guacamole, recipe HERE. Top with the quick pickled radish for extra crunch and flavor.
