Quick Pickled Red Onions

I absolutely am obsessed with pickled onions. They take just about anything dish from basic to amazing! Of course they are standard on tacos for me. But try them on a sandwich, add them to a salad and they just seem to add exactly what was missing. They will store for about a month in the fridge, if they aren't gone well before then. Give them a whirl and let me know how you've used them.

Pickled Red Onions
Ingredients
½ cup apple cider vinegar
½ cup red wine vinegar
1 Tbs agave nectar
1 tsp black peppercorns
1 tsp kosher salt
2 red onions, cut in half and sliced thin
Directions
In a medium saucepan bring the vinegars, agave nectar, peppercorns and kosher salt to a boil. Remove from heat. Place onions in a glass canning jar and pour the hot liquid and spices over to cover. Twist on lid and allow to cool. They will be ready to use once they are cooled. Pickled onion will store in the refrigerator for up to a month.
