EGG ROLL BOWL

This is quite simply the easiest meal I make throughout the week. It is quick, absolutely delicious, low carb and good for you. I typically eat it in a bowl topped with Sambal Oelek. Sambal is a fresh chili paste that is spicy a little tart and a little garlicky. I add it to salads and anything I think needs a little kick!
Before I start the stirfry, I start a couple of cups of rice in the rice cooker. BTW, if you don't have one, get one they are amazing and can cook more than just rice. All of my kids love this dinner. It actually takes only about 15 minutes from start to finish (don't forget to do the rice first!) and just buy the coleslaw and the bagged shredded carrots it saves a lot of time. Keep it healthy. Keep it quick and easy. Most importantly stop and eat it together at the table as a family.

Egg Roll Bowl
Ingredients
1 Bag coleslaw mix
1/4 C shredded carrots
1/4 C shredded carrots
1 lb. regular breakfast sausage
1/4 yellow onion diced
3 cloves garlic minced
1 Tbs ginger paste or pressed ginger
1/4 C soy sauce
1 tsp toasted sesame oil
1 tsp toasted sesame oil
2 green onions sliced
Directions
Place a nonstick skillet over medium high heat and cook sausage, breaking it up as you cook with spatula so it resembles ground beef. Once nearly cooked through add onion, garlic and ginger to pan and continue to stir fry until onion turns translucent, then add coleslaw mix and shredded carrots to skillet and saute about 3 minutes. Add soy sauce and sesame oil and toss with coleslaw/sausage mixture to coat. Remove from heat and sprinkle with green onions. Serve with steamed brown or white rice, cauliflower rice or on its own. Serves 4.
